We prepare roasted Chickpeas in a period of 15 days. It is a difficult product to make. It is subjected to heating for 3 days. Roasted chickpeas last longer. Their shells are removed and then they are laid out on a large area and left to rest. With a tool called “Mafrak”, it is gently pressed to separate them from their shells. During this process, some of the chickpeas are divided into two. Chickpeas, which are divided into two, are separated from the whole with a device called a sieve.

Those that split are called “broken chickpeas”. Broken chickpeas are generally used to make chickpea flour. Once they are roasted, they become mottled. This is called double roasted chickpeas.
