How To Roast Turkish Antep Pistachios
The most consumed form of this fruit is actually roasted and salted pistachios. Before starting the roasting stage, it is necessary to separate the pistachios from their red shells. The easiest way is to soak pistachios in warm water. In this way, the shells are softened. Softened pistachios are peeled by means of a large perforated sieve and the shells are sifted and passed to the bottom.
These peeled pistachios are dried under the sun. If sun drying is not possible or the amount of product is too high, drying can also be done in special machines. After this stage, the peanuts are cracked.
Pistachios are naturally grown 55 percent naturally and 45 percent covered. In the past, workers used to crack the 45 percent covered peanuts with wooden hammers. Now, thanks to modern machines, cracking and pistachio crushing operations are performed.
Pistachios to be roasted are pickled with their salted water. They pickled with salt are kept for a while. Thus, the taste of the salt penetrates into the pistachio. Afterwards, the pistachios roasted under high temperature are taken to rest in the roasting ovens. After the pistachios have cooled, they are put into sacks or paettes and offered for sale.
