Maturing Turkish Antep pistachios have a white hard shell within the soft red shell. There are red yellowish pistachios kernel inside the hard shell.

The outer soft red shell hardens when it dries under the sun. It completely cover the Turkish Antep pistachios kernel and helps to protect the Turkish pistachios for a long time like a vacuum plastic package. As long as it is kept in a cool and dry place, the Turkish pistachio in the red shell does not deteriorate for up to two years and keeps its freshness.

The easiest way is to soak pistachios in warm water. In this way, the shells are softened. Softened pistachios are peeled by means of a large perforated sieve and the shells are sifted and passed to the bottom.

These peeled pistachios are dried under the sun. If sun drying is not possible or the amount of product is too high, drying can also be done in special machines. After this stage, the peanuts are cracked.
